PH is important when storing foods in sealed Sous Vide bags that are oxygen free. Most pathogens and eliminated in any food at 130F, except Clostridium botulinum. The Botulism toxin is inactivated at 180F, but the spores are not killed until 240F. The spores are inactive at a PH below 4.7 and in salt solutions above 5%. The spores thrive at 40F to 120F in an anaerobic environment. Deaths are now near zero reported out breaks are rare (see CDC 2012 Report), but shelf life of refrigerated vacuum packed foods should take PH into account. In general anything below 4.5 is OK for a few months refrigerated. and anything higher for 1-2 weeks. All of the canned foods you see in the grocery store are pasteurized at 240F for ten minutes because of this problem. Most cases come from home canned tomatoes that have a high PH.
